When the weather is colder, I love to have homemade soups and stews. There is something comforting about them as the heat warms our bodies and souls. This easy to make White Bean and Spicy Sausage Soup is one such dish.
Easy White Bean and Spicy Sausage Soup
This soup is really delicious. It can be made in a single pot for easy cleanup.
Additionally, it freezes well so that you can make larger batches for even easier weekday meals. Just double the recipe and use a larger pot then freeze off the leftovers.

Preparing to Make Easy White Bean and Spicy Sausage Soup
As always, prepare your ingredients first so it is a dump, stir and simmer dish.

The beauty of this soup is that you can make it all in one pot. However, not just any pot will do! You need a thick bottomed pot for this dish.
My personal favorite is the BRK pressure pots. An alloy heat-conducting disk sealed into the stainless steel base of every pot spreads heat uniformly.
You can use them as regular pots OR you can speed up the cooking process with pressure. The pot comes with both a pressure lid and one for normal cooking.
Additionally, if you want to save some money, you can cook your beans in the BRK instead of buying canned beans! I make up a large batch of beans and then save them in freezer bags.

After all, who wants their wonderful concoction to end up leaving a scorched taste?
While I initially bought my diffuser plate to make things like rice, I find it helpful for anything simmering on the stove.
The only downside to this particular option is that my handle has come apart after several years of use. But, given the low cost to buy one, I am fine with that.

Recipe for Easy White Bean and Spicy Sausage Soup

Ingredients
- 3 T. olive oil
- 2 stalks celery, cleaned and finely chopped
- 2 large carrots, peeled and finely chopped
- 1 small white onion, finely chopped
- 3 cloves garlic, peeled and finely chopped
- 1 pound bulk spicy pork sausage, crumbled
- 3 c. chicken or vegetable stock
- 2 t. oregano, dried
- 2 t. rosemary, dried
- 1 t. crushed red pepper flakes
- 2 cans (15 oz.) cannellini beans, drained and rinsed
- 1 can (15 oz.) cannellini beans, pureed with liquid from can
- 3 large kale leaves, tough stems removed and cut into bite-sized pieces
- Salt and pepper, to taste
- ¼ c. fresh parsley, chopped
- Parmesan cheese, shaved
Instructions
- In a heavy bottomed pan, heat olive oil over medium-high heat. Add celery, carrots, onions, and garlic to pan and sauté until tender.
- Add crumbled bulk pork sausage to skillet and cook until no longer pink inside. Carefully drain excess fat from the pan before adding chicken or vegetable stock. Bring to a boil, and then reduce heat to medium-low. Add oregano, rosemary and crushed red pepper flakes.
- Add whole and pureed white beans to skillet. Cover and simmer for 20-25 minutes, stirring occasionally. Add kale and simmer another 15-20 minutes. If soup is too thick, add more stock to thin. If it is too thin, continue cooking until desired consistency is reached.
- Garnish with chopped fresh parsley and shaved Parmesan cheese and serve with crusty Italian bread.
