When fall arrives, I am ready for dishes that fill your belly and warm your heart. A family favorite is beef stew.

Thanks to the Mealthy Multipot we have in the house, it is easy to make and I don’t need to watch a pot on the stovetop.

Making Beef Stew in the Mealthy Mulitpot

This is a really easy recipe to make for dinner. With an electric pressure cooker like the Mealthy Multipot, I can also pass the task along to a teenager. It is such a quick process and then we can all enjoy it for dinner.

Gather Ingredients for Beef stew

My first try with this had me cooking everything at once in the post. This leads to somewhat mushy vegetables. If you like that, then you just cook it all for 25 minutes. Otherwise, follow the instructions below to get everything cooked to perfection.

I do enjoy using red wine, but you can substitute with beef broth instead.

Also, I like to sprinkle some parsley on top when serving for an extra splash of color.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 pounds stew beef, cut into 1-inch chunks
  • 1 cup red wine
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • pinch of marjoram
  • 1/2 tsp thyme
  • 1 tsp white pepper
  • 2 stalks celery, sliced
  • 6 carrots, sliced
  • 4 potatoes, cut into 1-inch slices

Instructions

  1. Add oil to pressure cooker and set to Sauté on Normal.
  2. Sear beef until browned.
  3. Deglaze the pan using the red wine.
  4. Stir in the onion and spices, lock the pressure cooker lid in place and set steam vent to Sealing.
  5. Select Meat/Stew and cook for 15 minutes on High pressure. when finished, quick-release pressure with the steam vent.
  6. Without stirring, add the carrots, celery and potatoes on top of the stew.
  7. Lock pressure cooker lid in place, set steam vent to Sealing and cook for 5 minutes at high pressure using the meat/stew setting.
  8. Once the cooking cycle has completed, set steam vent to Venting to quick-release pressure.
